Oatmeal Biscuit Shortcakes with Fruit Compote

You can serve these shortcakes with fresh raspberries or strawberries in place of the fruit compote.
ingredients
For the Shortcakes
2 cups all-purpose flour or whole wheat pastry flour
½ cup oatmeal
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
8 tablespoons unsalted butter, chilled and cut into ½-inch pieces
¾ cup buttermilk or low-fat plain yogurt
1 egg, slightly beaten, for glaze
For the Fruit Compote
3 cups frozen fruit, such as blueberries, strawberries and cherries
¼ cup packed brown sugar
2 tablespoons orange juice or water
1 tablespoon cornstarch
Instructions
To make the Shortcakes:
1. Combine flour, oatmeal, sugar, baking powder, cinnamon and salt in large mixing bowl. Using fingers or a pastry blender, work butter into flour mixture until dough resembles coarse meal. Add buttermilk and stir until dough forms a ball.
2. Turn on to lightly floured surface and pat into disk about 3/4 inch thick. Wrap in plastic wrap and chill for at least an hour, preferable overnight.
3. Preheat oven to 400 degrees. Remove dough from refrigerator and let rest for ten minutes. Cut eight 3-inch biscuits and brush tops with beaten egg. Place on baking sheet and bake until golden brown, about 20 minutes.
4. To serve, slice each shortcake horizontally. Place bottom half on dessert bowl and top with about 1/3 cup fruit compote. Layer with top of shortcake, another 1/3 cup fruit and a spoonful or two of plain yogurt.
The make the Fruit Compote:
1. Place frozen fruit and brown sugar into a saucepan over medium heat. Cook until sugar dissolves and fruit renders juice, about five minutes.
2. In a small bowl, whisk together cornstarch with orange juice, then stir into fruit. Bring fruit to a simmer and cook until compote is thickened, about five minutes.
Variation: You can use this same basic shortcake recipe to make savory biscuits. Just eliminate sugar, add ½ cup shredded cheddar and 2 teaspoons dried herbs to flour mixture just before combining.
