Lobster Tower with Whole Grains and Lemon-Basil Olive Oil

This creative salad or appetizer has great 3-D appeal on the plate. Quantities are scaled for restaurant and foodservice, but would also be suitable for a luncheon with a dozen friends. Your choice of any whole grain or combination of whole grains can be substituted for the Indian Harvest Whole Grain 5 Blend.
ingredients
1/3 cup olive oil
3 Tbsp fresh basil, chopped
1 Tbsp fresh lemon juice
12 ounces lobster meat, steamed and cooled
8 ounces Indian Harvest Whole Grain 5 Blend (about 1 cup dry)
4 slices thick cut smoked bacon, diced
1 cup corn, roasted
3/4 cup tomato, seeded and diced
3 avocados, diced
lemon juice
salt & pepper, to taste
Instructions
1. Mix olive oil with basil and lemon juice, chill for one hour.
2. Steam lobster and cool immediately. When cool, cut or pull apart into smaller pieces (1/2 to 3/4 inch) and refrigerate.
3. Cook grains according to package directions, using your favorite stock.
4. Peel, pit and dice avocados; combine with enough lemon juice to coat.
5. Sauté diced bacon until fat is rendered out. Remove all but 1 teaspoon of bacon fat from pan and add corn. Sauté for one minute, add tomato. Remove from pan and combine with avocado. Salt and pepper to taste.
For Plate Presentation: Using a 3/4 cup open ended mold on flat surface, start with 1/4 cup of warmed grains in bottom. Pack grains lightly and add 1/4 cup avocado, corn, bacon, and tomato mixture. Finish with 1 ounce lobster meat and pack firmly. Release mold onto plate by pushing through from the top. Drizzle lemon basil olive oil over lobster and garnish plate with it as well. Use fresh basil sprig for final garnish.
