Power-Boosting Oatmeal Cookies

Power-boosting oatmeal cookies

Try using all whole wheat flour for even more power in these delicious chewy cookies.

ingredients

10 tablespoons butter, room temperature
½ cup packed brown sugar
¼ cup granulated sugar
1 egg
½ teaspoon vanilla
½ cup all-purpose flour
¼ cup whole wheat flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 cup old-fashioned oatmeal (uncooked)
½ cup Life cereal
½ cup dried cherries
½ cup almonds, coarsely chopped
¼ cup dry roasted sunflower kernels
2 tablespoons flax seeds, optional

Instructions

1. Preheat oven to 350 degrees. 

2. Using an electric mixer, beat butter, brown sugar and granulated sugar until light and fluffy, about two minutes.  Beat in egg and vanilla until well combined. 

3. In a separate bowl, whisk together all-purpose and wheat flours with baking soda, salt and cinnamon.   Add to butter mixture and beat just until combined. 

4. Stir in oatmeal and Life cereal, then add cherries, almonds, sunflower kernels and flax seeds.  

5. Drop by tablespoon onto parchment-lined baking sheet.  Bake in the center of the oven until golden, about 12 to 14 minutes.
