Montana High Plains Wheat Berry Chili

Luscious whole grain wheat berries and a large red santaka chili pepper, along with a sensational seasoning packet, make this a hearty, full flavored chili. The wheat berries retain a juicy texture that our tasters love!

ingredients

1 package Frontier Soups Montana High Plains Wheat Berry Chili (Wheat berries and Montana High Plains Chili seasoning packet)
1 lb. Ground Turkey
2 Tbsp oil
1 14 oz Can Beef Or Vegetable Broth
1 28 oz Can Tomato Pieces
Optional: 1/2 Cup Red Wine

Instructions

1. Soak wheat berries in cold water overnight, then bring to a simmer in a pot of fresh water for 50 minutes.

2. In a separate pot, sauté ground turkey in 2 Tbsp oil. Stir in the contents of seasoning packet, and, if desired, add the red santaka chili pepper for more heat.

3. Add broth, drained wheat berries and tomatoes, and simmer 1 hour. If desired, add optional wine and serve with grated cheddar cheese, or sour cream, on top, and round up the campers for this hearty whole grain chili!

Vegetarian Version: Omit ground turkey and substitute 1 large baby eggplant, diced but not peeled, and 1 large sweet onion, chopped.

1. Cut up one large eggplant into 1/2 inch cubes, lightly salt and let stand fifteen minutes.

2. Heat 4 Tbsp oil in 4 quart pot, add eggplant and one large sweet onion chopped, tossing and turning to brown lightly.

3. Add broth, wheat berries and tomatoes and simmer 1 hour. Serve with grated cheese, if desired.
