Ingredients

1 tablespoon honey

2 tablespoons olive oil

1 tablespoon fresh lemon or lime juice

½ teaspoon salt

¾ cup very thinly sliced red onion

¾ cup water

½ cup quinoa

4 cups cubed, seeded watermelon

½ cup crumbled feta cheese

¼ cup chopped fresh basil or mint

Instructions
  1. In a small, non-reactive bowl, whisk together honey, olive oil, citrus juice, and salt. Add thinly sliced red onions and chill. 
  2. Bring water and a pinch of salt to a boil, then add quinoa. Reduce heat to low and simmer until grains are soft, about 12 minutes. Drain off hot water, rinse in cool water and drain thoroughly. Place in a large bowl or spread onto a sheet tray and allow to cool and dry thoroughly. 
  3. To serve, toss watermelon with red onions and dressing. Gently stir in cooked quinoa and top with feta and herbs.

**** This sounds delicious, but can't try it because the instructions say to add chili, but there is no chili in the ingredient list.

Hi Mary -- We're glad you're excited to give this recipe a try! There isn't any chili in this recipe. The instructions simply suggest that after you've added the red onions, you put the salad in the fridge to chill. I suspect that's where the confusion came from. Hope that helps!
