Whole Grain Intake in Latin America Falls Short of Recommendations

Dietary guidelines around the world recommend making more of our grains whole, and researchers wonder if people in different countries are meeting these goals. In a study of 9,128 people across eight Latin American countries, the average person was eating less than one full serving (only 14.7 grams) of whole grain foods per day. Women and older adults were more likely to eat more whole grains, while people with lower incomes were less likely to eat more whole grains. The most commonly eaten whole grains in the survey were oatmeal, masa harina, whole wheat bread, corn chips, and wheat crackers.

19% of Flours at Supermarkets in Sydney are Whole Grain

Many dietary guidelines recommend that people make at least half their grains whole, yet little has been published on the availability of whole grain options at supermarkets. In a February 2020 audit of the flour aisle at four major supermarkets in metropolitan Sydney, researchers identified 130 different flour products. Of those, only 19% were whole grain flour. The majority of products were refined wheat flour. Not surprisingly, the whole grain flours contained significantly more fiber and protein.

Whole Wheat Flour Has More Minerals, Antioxidants than Refined

Researchers analyzed 168 types of wheat flour purchased throughout the UK and Germany to compare their nutritional profiles. While spelt and organic wheat varieties had significantly higher levels of antioxidants and minerals than their conventional/modern counterparts, a far greater impact on nutrition was observed when comparing whole grain wheat to refined wheat. Whole grain wheat flours had 2-4.3x higher antioxidant concentrations and activity, 144% more phosphorous, 125% more potassium, and 209% more magnesium than refined wheat flours. The authors conclude that “refining (removal of the bran and germ) (a) has a substantially greater impact on the mineral nutrients and phytochemical concentrations in flour than wheat genetics/species choice (T. aestivum vs T. spelta) and production protocols (organic vs conventional), (b) diminishes the differences in antioxidant activity, and phenolic and mineral concentrations in wheat flour produced with grain from contrasting farming systems and wheat species.”

Sourdough Fermentation Methods Improve Quality of Partially Whole Wheat Pasta

Swapping out some of the white flour for whole wheat flour in pasta is a simple way for manufacturers to bump up the nutritional quality of their products. But researchers wonder if different whole wheat pasta formulations might be better than others. In this study, researchers compared the nutritional and sensory (taste, acceptability, etc.) characteristics on two types of partially (28.5%) whole wheat fresh pasta: in one, the whole wheat flour was fermented (essentially a sourdough starter) and in the other, the whole wheat flour was not fermented. The fermented pasta showed a higher content of free essential amino acids and phenolic compounds, lower phytic acid content, and higher antioxidant activity. In consumer testing in a group of 54 people, the fermented pasta was rated higher for overall acceptability (taste, texture, and flavor). Interestingly, when people were told about the use of sourdough fermentation in the pasta, the acceptability ratings were even higher, reflective of the growing appetite for functional foods.

Avoiding Wheat Linked with Low Fiber, High Saturated Fat Intakes

Although wheat has been a staple crop for centuries, in recent years it has (unjustly) become a scapegoat by fad-dieters seeking a wheat-free or low-carb diet. In this study, researchers analyzed the diets of 30 people who reported avoiding wheat to see if this wheat-free diet impacted their nutrient intake. The wheat avoiders (many of whom happened to be avoiding dairy as well) consumed too little fiber and calcium, and too much saturated fat and total fat according to dietary recommendations. Interestingly, although 85% of the participants reported avoiding ALL wheat products, ⅓ of the participants reported eating a wheat-based food in their food record (mostly in the form of discretionary snacks/desserts).

Infants Accept Partially Whole Grain Cereal

Early exposure to whole grain foods can shape food preferences later in life, so researchers wonder if it may be worthwhile to start with infants. Infant cereals are one of the first solid foods given to babies to compliment breast milk or formula and are often made from refined grains like white rice or pearled barley. In this study, researchers in Spain worked with parents of 81 infants (4-24 months old) to test the acceptability of 30% whole grain infant cereals (made with whole wheat), compared with a popular refined infant cereal. (Whole wheat was chosen to comply with European infant legislation, to make sure that the amount of fiber was appropriate.) After trying each of the cereals for 3 days in a row, infants were just as likely to accept and finish the whole grain cereal as they were the refined cereal. The researchers concluded that infant cereals are an opportunity to expose young people to whole grains earlier in life, to build a taste for them.

Antioxidants in Whole Wheat Unaffected During Baking

Whole grains are starting to gain recognition as being rich sources of antioxidants, but many wonder if these antioxidants are affected during processing, such as bread baking. To test this theory, scientists at the University of Maryland measured phenolic acid (antioxidant) content in flour, dough, and bread fractions from three whole and refined wheat varieties. As expected, “all phenolic acids measured were more abundant in whole wheat than refined samples.” The researchers also found no significant change in antioxidant levels after the breads were baked. “Thus, the potential phytochemical health benefits of total phenolic acids appear to be preserved during bread baking.”

MANY ANTIOXIDANTS IN WHOLE GRAINS

While fruits and vegetables are known as sources of healthy antioxidants and phenolic compounds, research increasingly shows that whole grains contain them too. In this review, researchers analyzed the total phenolic contents, phenolic acid profile and antioxidant activity of several whole grains, including wheat, corn, rice, barley, sorghum, rye, oat and millet. The review shows that whole grains contain a number of phytochemicals (including antioxidants) and significantly exhibit antioxidant activity. Researchers conclude that the consumption of whole grains is considered to have significant health benefits including prevention of chronic diseases such as cardiovascular disease, diabetes, and cancer because of the contribution of phenolic compounds.

Blood Test Confirms Whole Grain Consumption Levels

Documenting the benefits of whole grains often depends on asking people to recall how often they eat whole grain foods, a process subject to less-than-precise memories and lack of understanding of just what constitutes a whole grain food. Now scientists at Uppsala University in Sweden have provided further evidence that blood levels of alkylresorcinols – a type of fat found in the bran of rye and wheat but in few other foods — can serve as more objective evidence of regular consumption of wheat and rye.  The researchers asked 72 adults to keep detailed, weighed records of everything they ate for 3 days, on two separate occasions, then tested the levels of alkylresorcinols in their blood. They found a very reliable relationship between the foods eaten and the blood levels measured.

Antioxidants High, in Emmer and Einkorn

In Ankara, Turkey, scientists at Hacettepe University’s Department of Food Engineering compared 18 ancients wheats (12 emmer, 6 einkorn) with 2 modern bread wheats, to assess their total phenolics and flavonoids, phenolic acids, lutein, total yellow pigment, and total radical scavenging capacities. Results showed “remarkably higher total antioxidant activity” in emmer varieties, and “quite high levels of lutein” in the einkorn samples. In conclusion, the findings were considered to be key to “breeding wheat varieties for higher concentration and better composition of health-beneficial phytochemicals.”

Organic Wheat Judged Tastier

Scientists at the University of Alberta baked whole wheat bread using the same cultivar of hard red spring wheat grown both conventionally and organically. They then asked 384 consumers to rate the taste – once, with unlabeled samples and no knowledge of the different origins, and again, after the breads had been labeled and the different growing conditions described. Consumers rated the taste of the organic bread higher both in the blind test and the informed test. Their ratings were unaffected by information on the environmental benefits of organic farming, but they liked the organic bread even more after learning of the potential health benefits of organically-grown foods.

Nutrient Changes Noted in Sprouted Wheat

German researchers sprouted wheat kernels for up to 168 hours (1 week), analyzing them at different stages to learn the effects of germination on different nutrient levels. While different times and temperatures produced different effects, overall the sprouting process decreased gluten proteins substantially, while increasing folate. Longer germination times led to a substantial increase of total dietary fiber, with soluble fiber tripling and insoluble fiber decreasing by 50%.
