Whole Grain Intake in Latin America Falls Short of Recommendations

Dietary guidelines around the world recommend making more of our grains whole, and researchers wonder if people in different countries are meeting these goals. In a study of 9,128 people across eight Latin American countries, the average person was eating less than one full serving (only 14.7 grams) of whole grain foods per day. Women and older adults were more likely to eat more whole grains, while people with lower incomes were less likely to eat more whole grains. The most commonly eaten whole grains in the survey were oatmeal, masa harina, whole wheat bread, corn chips, and wheat crackers.

Whole Grains Linked with Lower Risk of Type 2 Diabetes

In a large study of nearly 200,000 US adults, those eating whole grains most frequently had a 29% lower risk of developing type 2 diabetes across the approximately 30-year study period than those rarely or never eating whole grains, even after adjusting for other lifestyle factors. When looking at specific whole grain foods, common foods like whole grain breakfast cereal, oatmeal, whole grain bread, and brown rice were all linked with a lower risk of type 2 diabetes. The exception was popcorn, which was linked with a higher risk of type 2 diabetes when eaten more than once per day, perhaps due to its association with butter sauces or sugary flavorings.

Less Processed Whole Grain Foods Linked with Better Blood Sugar Control in People with Diabetes

Replacing refined grains (like white bread or white rice) with whole grains (like whole grain bread or brown rice) is a simple swap that can yield measurable health benefits. But what if you are already eating whole grains and are ready to take the next step? In this study, researchers randomly assigned 63 adults in New Zealand with type 2 diabetes to a diet with either intact, minimally processed grain foods (whole oats, brown rice, whole wheat bread made with coarse whole grains) or more processed, finely milled whole grains (instant oats, brown rice pasta, whole grain bread made of finely milled flour). Those in the less processed group had a significantly lower post-meal blood sugar response and lower blood sugar variability throughout the day, indicating better blood sugar control.

Whole Grain Breads with Larger Particle Size / Less Processing Linked with Healthier Blood Sugar Control

In a small study, researchers assigned 15 people to four different types of 100% whole grain bread and measured their blood sugar responses (using iAUC, post-meal glucose, and 3-hour glucose). One bread was made with 100% stone ground flour, one was made with 100% roller milled flour, one was made with 50% roller milled flour and 50% cracked whole wheat, and one was made with 40% roller milled flour, 30% intact whole wheat, and 30% cracked whole wheat — although all breads were 100% whole grain. Among the roller milled breads, they found that the larger the particle sizes in the bread (intact whole wheat > cracked whole wheat > roller milled wheat), the gentler the impact on blood sugar. Interestingly, the blood sugar response of the stoneground bread (as measured by iAUC) was better than the 50% cracked wheat / 50% roller milled bread, but not quite as good as the 40% roller milled / 30% intact whole wheat / cracked whole wheat bread.

AMERICANS CAN CORRECTLY CATEGORIZE MOST FOODS AS WHOLE GRAIN OR REFINED GRAIN

In this study, researchers asked 169 low-income adults to look at 11 foods in their original packaging and determine if each was a whole grain or a refined grain. The majority of participants (7 out of 10) correctly identified 4 out of 5 of the whole grain products as whole grain, and nearly as many (6 out of 10) participants correctly identified 5 out of the 6 refined grain products. Specifically, 9/10 people correctly identified whole grain bread, 8/10 correctly identified whole grain crackers & whole grain cereal, and 7/10 correctly identified oatmeal as a whole grain, while popcorn tripped most people up (with only 3/10 people correctly identifying it as a whole grain food). Similarly, 8/10 correctly identified refined crackers, 7/10 correctly identified refined macaroni and tortillas, and 6/10 correctly identified refined bread and cereal, while white rice was tricky for people (with only 4/10 correctly identifying it as a refined grain). Based on interviews with a subset of 60 of the participants, the researchers found that helping people more clearly identify whole grains on the package, and reducing the cost (or perceived cost) of whole grain foods may help increase whole grain consumption in low-income adults.

Whole Wheat Promotes Resilience in Liver, Protects Against Higher Inflammation

Health not only implies being free of disease; health also takes into account how well we adapt to the stresses of everyday life, and the inevitable wear-and-tear on our bodies – in other words, resilience. To see how whole wheat might impact inflammation and resilience, 50 overweight and obese adults were randomly assigned to either 98 grams of whole wheat per day (from bread and cereal) or 98 grams of refined wheat per day for 12 weeks. Scientists then measured markers of inflammation and liver health and used modeling (the “health space” approach) to determine how resilient their bodies were to external stressors based on these findings. In this experiment, whole wheat was shown to protect against higher inflammation, and was also shown to promote resilience in the liver.

Gluten-Free Diet Not Appropriate without Medical Diagnosis

Gluten is a compound found naturally in wheat, barley, and rye that helps dough stretch and bread rise. Many misguided dieters today choose to go gluten-free, even though only about 1% of the population has celiac disease (an autoimmune disorder where gluten must be avoided). In this review, researchers analyzed studies on the nutritional adequacy of gluten-free diets. They found that gluten-free diets tend to have less fiber, calcium, magnesium, zinc, vitamin B12, folate, and vitamin D, and tend to have more saturated fat and exposure to arsenic. The researchers note that “the majority of persons adopting a [gluten-free diet] have no medical basis for doing so,” and that “only persons with [celiac disease], [wheat allergy], or [non celiac gluten-sensitivity] should follow a [gluten-free diet], and they should do so under medical supervision.”

EAT-Lancet Commission Outlines a Healthy, Sustainable Diet

Diet is intimately linked both to human and environmental health. In this article, a commission of distinguished scientists from different fields set out to examine the components of a healthy diet and the link between diet and environmental health. Through an extensive review of literature, the researchers found that an ideal diet that meets basic nutritional needs and can be sustainably produced is mostly plant-based. Specifically, this diet is based around about 11 ounces vegetables, 9 ounces of dairy foods (a little over a cup of milk) 8 ounces of whole grains (about 8 servings, such as a slice of bread or a ½ cup cooked grains), 7 ounces of fruit, 3 ounces of legumes, 2 ounces of nuts, and an optional 2 ounces of other animal foods (like eggs, poultry, or meat) per day. The authors suggest that a global shift towards these dietary principles can prevent approximately 11 million deaths per year, and can sustainably produce enough food for the growing population without further damage to the environment.

Replacing White Rice with Whole Grain Bread May Lower Diabetes Risk

White rice has displaced many traditional whole grains across Asia, so researchers wonder how white rice might relate to diabetes risk. In a study of 45,411 Chinese adults followed for 11 years, researchers found that replacing white rice with white bread and whole grain bread can reduce type 2 diabetes risk by 10% and 18% respectively, and that replacing white rice with noodles, red meat, or poultry might actually increase diabetes risk. Rice intake itself was not associated with higher type 2 diabetes. The authors conclude that “recommendations to reduce high white rice consumption in Asian populations for the prevention of [type 2 diabetes] may only be effective if substitute foods are considered carefully.”

Whole Grains Associated with Lower Risk of Diabetes

Whole grains are healthy carbohydrate foods that may be especially protective against type 2 diabetes. In this study, researchers analyzed the eating habits and health status of 55,465 middle-aged adults in Denmark. Those eating more whole grains were 11% and 7% less likely to develop type 2 diabetes (for men and women, respectively) over the 15-year study period. Rye bread, whole-grain bread, oatmeal, and muesli were all significantly associated with a lower risk of type 2 diabetes for both men and women, indicating a benefit for whole grains in general, rather than just one specific type of whole grain food.

Low Carb Diets Linked with Early Death

There are countless different diets out there, from low carb to high carb to everything in between. But which eating pattern is linked with longer lives? Scientists are on a mission to find out. Researchers analyzed the eating habits and health outcomes of 15,428 adults in the US, following them for 25 years. The “sweet spot” for the lowest risk of mortality was diets that had 50-55% of their calories from carbohydrates, especially those with lots of plant foods, like whole grain bread, nuts, vegetables, and peanut butter. This amount aligns with traditional diets (such as the Mediterranean diet), as well as the US Dietary Guidelines for Americans. On the other hand, low-carb diets that had lots of meat were linked with higher mortality.

Evidence of Ancient Flatbreads Pre-Dates Neolithic Agriculture

Though many Paleo dieters believe that bread is a relatively “new” foodstuff, archeological evidence paints a different picture of what ancient diets were like for our hunting and gathering ancestors. Archeologists analyzed the remains of ancient fireplaces in what is today Jordan, and found the oldest empirical evidence of bread-like products from 14,400 years ago. These ancient flatbreads existed 4,000 years before Neolithic agriculture, and challenge previous assumptions about grains’ role (or lack thereof) in ancient, Epipaleolithic diets.
