  1. Combine the water and salt in a large pot and cover with a lid. Bring to a boil. Add whole grain amaranth, cover pot and reduce burner to its lowest setting. Simmer for 20 minutes, or until the water is completely absorbed. 
  2. Turn off heat, add in the cheddar and cream cheese. Stir well until melted. 

Optional Toppings: red pepper flakes, sweet and spicy green apple salsa, broccoli or other steamed veggies, grilled shrimp.
