  1. Sauté onions in butter over medium heat 15 minutes, stirring frequently. If desired, sprinkle with sugar. Continue cooking at low temperature to caramelize the onions, approximately 45 minutes.
  2. Season with salt and pepper. Add half of the broth; simmer uncovered 15 minutes. Add cooked wild rice and the rest of the broth; simmer 5 minutes, remove from heat and stir in wine.
  3. Top each serving with 3 bread slices; sprinkle with cheese. Run under grill to melt the Gruyère AOP cheese.
  4. Serve immediately.

4 ½ lbs onions, sliced thin

⅓ cup butter

¼ cup sugar, optional

6 ⅔ cups beef broth

3 ⅓ cups wild rice, cooked

2 tablespoons port wine

30 whole grain baguette slices, lightly toasted

2 ⅔ cups grated Le Gruyère AOP cheese 

Salt and pepper to taste
