- 2 tablespoons active dry yeast
- 1 cup plus 2 tablespoons warm water (about 110 degrees)
- ⅓ cup avocado oil
- 2 tablespoons organic sugar
- 1 large egg, beaten
- 1 teaspoon sea salt
- 3 to 3 ½ cups sprouted red or white wheat flour
1. Add yeast and warm water to a large bowl or bowl of stand mixer. Add oil and sugar; let stand 5 minutes.
2. Whisk in egg. Slowly mix in the salt and flour. Continue to add flour until you have a soft dough that pulls away from the side of bowl. Do not over knead. This process should only take a couple of minutes at most.
3. Immediately divide dough into 8 equal pieces; shape each into a ball (no need to let rise).
4. Preheat oven to 425 degrees. Place the dough balls on a greased or parchment lined baking sheet. Cover with a kitchen towel and let rest for 10 minutes. After 10 minutes, brush the top of buns with an egg wash (beat an egg with 2 tablespoons water). You can sprinkle with sesame seeds (optional).
5. Bake until golden brown, 9-12 minutes.
