Ingredients
1 cup whole grain amaranth
3 cups water
Salt, to taste
1 cup shredded sharp cheddar
3 tablespoons cream cheese
Instructions
- Combine the water and salt in a large pot and cover with a lid. Bring to a boil. Add whole grain amaranth, cover pot and reduce burner to its lowest setting. Simmer for 20 minutes, or until the water is completely absorbed.
- Turn off heat, add in the cheddar and cream cheese. Stir well until melted.
Optional Toppings: red pepper flakes, sweet and spicy green apple salsa, broccoli or other steamed veggies, grilled shrimp.
